Vegetarian Curry with Brown Rice

Ingredients:
2 tbsp peanut oil
1/2 tsp mustard seeds
1/2 tsp cumin
2 green chili peppers
2 cloves garlic
1 tsp ginger
2 onions
4 large zucchini
2 large potatoes
4 oz okra
4 oz butternut squash
1/2 tsp white pepper
1 tbsp worcestershire sauce
1 tsp salt
2 tbsp soy sauce
2 cups veg broth
1/2 cup half and half
1/4 cup cilantro
1 1/2 cup brown rice
Directions:
1. Heat oil. Add mustard and cumin seeds - 3 min. Add chilis, garlic, ginger, and onions - 5 min.
2. Stir in zucchini, potatoes, okra, butternut squash. Add white pepper, salt, worcestershire sauce, and soy sauce. Pour in stock, cover and simmer 30 min.
3. Stir in cream and simer 5 min. Garnish with cilantro and serve over rice.
