Vegetarian Cream of Cauliflower Soup

wonderful hearty meal soup
Ingredients:
1 quart vegetable broth
1 head cauliflower
1 carrot, medium
2 small celery ribs
1/4 cup onion
1 teaspoon garlic
1 1/4 cups 2% low-fat milk
1 tablespoon flour
2 tablespoons butter
salt, and perpper
Directions:
1. Heat stock to boiling.
2. Break cauliflower florettes off.
3. Cut celery and carrots into 2 slices.
4. Chop onion and mince garlic.
5. Add all the vegetables to your pot, reduce heat to simmer, and cover. Simmer about 15 minutes, or until the vegi's are tender.
6. Cool slightly.
7. Transfer the ingredients to a blender or food processor, add the flour, and process until smooth.
8. Pour the pureed mixture back into the pot.
9. Add the milk, butter, salt and pepper and re-heat.
