Simple meatless chili that is quick and easy.
Ingredients:
1 yellow onion
3 tbsp grapeseed oil
2 cloves fresh garlic
29 oz. muir glen fire roasted tomatoes, diced
8 oz. boca ground burger
29 oz kidney beans
1 cup vegetable broth
1 oz chili seasoning mix
1 tbsp chili powder
1 tbsp paprika
Directions:
1. Thaw the Boca Burger ?meat?.
2. Dice the onion, garlic and optional ingredients and sautee in 2 tablespoons of Grapeseed oil.
3. When brown stir in the thawed Boca Burger ?Meat?; reduce heat as the Boca burger tends to stick.
4. Add the rest of the oil to the ?meat? mixture.
5. Add in the Chili mix & seasonings and stir well.
6. Stir in the tomatoes, beans, vegetable broth.
7. Cook on low heat for about 15 minutes. Remove from heat and let sit for 20 minutes ? this let?s the juices all settle in. Heat up on low again right before serving
8. Garnish with optional toppings (cheese, sour cream, chives, etc.) and serve.
9. Best with veggie corn bread or whole wheat crackers.
