Vegetable Chili, made with Soya mince must remember to add the calories for dried soya mince for each portion.
Ingredients:
68 grams celery
175 grams onion
151 grams zucchini
205 grams red pepper
524 grams mushrooms
288 grams aubergine
400 grams canned kidney beans
820 grams canned tomatoes
1 tablespoon worcestershire sauce
2 tablespoons tomato puree
1/2 teaspoon dried chili
1 teaspoon paprika
30 grams stock cube
Directions:
1. Chop all the vegetables and add with beans and tomatoes to a big pot
2. Bring to the oil then on low heat cook for 20 mins, while Soya mince is soaking.
3. Add mince, tomato puree, stock cubes and Worcestershire sauce and stir.
4. Leave to cook real slow for at least two hours on minimum hob heat.
5. Serve with Rice, Pasta or a Jacket Potato.
