Delicious grilled vegetarian sandwich, perfect for lunch or dinner.
Ingredients:
1 ciabatta roll
1/4 eggplant, sliced
2 tbsp olive oil
2 garlic cloves
2 tbsp pesto
1/2 tomato, sliced
1/2 red onion, sliced
5 basil leaves
1/2 cup fresh mozzarella
Directions:
1. Slice eggplant thinly, brush with oil and garlic. Broil in oven until brown and slightly crispy.
2. Meanwhile, slice ciabatta bun in half. Brush each side with oil and garlic.
3. Slice tomato, red onion, bocconcini and layer onto bottom half of bun.
4. Spread pesto on top half of bun, then layer with basil leaves.
5. Add eggplant in centre, close sandwich. Grill on George foreman style grill until cheese is melted and bread is crispy.
