Ingredients:
2 cups broccoli, cut in pieces
1 cup of cauliflower, cut in pieces
1/2 onion, cut in strings
1/2 red pepper, finely cut
1 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups eggplant, diced
Directions:
1. Cut vegetables
2. Put oil in frying pan
3. Heat oil
4. Add onions and peppers
5. Add rest of ingredients
6. Cook until tender
