Vegetable Winter Chili

This chili is one of my all time favorite creation, for lovers of beans, tomatoes, latin american food, and for food lovers of anything, this easy to make chili can be enjoyed time after time.
Ingredients:
(all canned and fresh ingredients are interchangeable)
4 tbsp olive oil
30-32 oz. (2 small cans) black beans
16 oz (one can) red beans or small red beans
20 oz canned tomatoes with juices (1 1/2 small cans)
1 1/2 cups water
1 red pepper chopped
1 onion chopped
2 tomatoes chopped finely.
1 cup corn frozen or fresh kernels.
1 red yellow pepper chopped
1/2 green pepper chopped
2 - 3 small garlic gloves mashed or minced
1 tbsp freshly squeezed lime juice
3 tbsp cumin
1/2 tbsp finely chopped cilantro
1/2 tbsp chopped parsley
1/2 tsp black pepper
1 tsp chili powder
2 tsp salt
2 tsp oregano
spice - 2 tsp red pepper flakes, or 3 tbsp chopped jalepenos, or 2 tbsp chopped hot red peppers
3 tbsp butter
Directions:
1. In a large pot, heat olive oil, then add onions and garlic. saute for around 3-5 minutes or until onions become slightly transparent. add water and stir till boiling. add all the beans to the pot and stir until incorporated with the onion mixture. add 2 of the 3 tbsp of cumin, along with the cilantro, parsley, black pepper, salt, oregano, and choice of spice. let cook on med low heat for 5 minutes, then add chopped tomatoes, corn, and peppers. stir until incorporated, then add lime juice, remaining cumin, and taste test - adding spices according to personal preference. add butter, and stir until melted. place on a lower heat and let simmer for half an hour. taste and adjust. serve and enjoy!
2. good toppings or accompaniments include - cheese (cheddar, mozzarella, etc..) crushed up croutons, or southwestern bread (toasted is good) grilled cheese, pita, or tortilla.
