Vegetable Tempura

Ingredients:
vegetable oil
zucchini, sliced into 1/2-inch slices
broccoli florets
flour
carrots, 1/4-inch dice
cauliflower florets
tempura batter
2 scallions, sliced
2 tablespoons rice wine vinegar
1/2 cup soy sauce
1 tablespoon ginger, grated
Directions:
1. Heat oil to 375 degrees in electric fryer or in a large, deep heavy pan on stove top. Roll vegetables in flour and shake off excess. Dip vegetables into batter and carefully place in oil to fry. Remove from oil when golden brown. Place on paper towels to drain. Serve with dipping sauce.
2. DIPPING SAUCE FOR VEGGIES
3. Combine all ingredients in bowl. Stir to combine. Serve with deep-fried vegetables.
