This is a nice basic vegetable stock. The mushrooms or cheese rind contribute a savory body.
Ingredients:
1/2 cup dried porcini mushrooms or 1 rind parmigiano-reggiano cheese
2 medium onions, thinly sliced
4 medium carrots, chopped
1 medium leek, cleaned thoroughly and thinly sliced
3 celery ribs, sliced thin
6 garlic cloves, sliced
10 cups cold water
Directions:
1. Place all the ingredients in a large stock pot. Cover with water.
2. Bring to a boil. Reduce heat and simmer for 1 hour.
3. Strain.
