Vegetable Stir Fry
Ingredients:
1 tsp cornstarch
1 tsp brown sugar
2 tbsp low sodium soy sauce
1 tsp sesame oil
2 tbsp canola oil
4 cups broccoli
1 red pepper
1 onion
2 garlic cloves, minced
1 tbsp fresh ginger, minced
2 cups white rice
Directions:
1. Combine cornstarch, brown sugar, 3 tbsp cold water, soy sauce, and sesame oil in a bowl. Set aside.
2. In a large wok or skillet, heat canola oil until very hot. Stir fry broccoli for 3 minutes. Add pepper, onion, garlic, and ginger. Stir fry for 2 more minutes. Reduce heat, add soy sauce mixture. Cook and stir for 2 minutes.
3. Serve over steamed rice.
