This is a good basic vegetable soup. Crazy for posting it in the summer but I am puting up veggies for winter and it was on my mind.
Ingredients:
1 pkg soup starter or beef stew starter or favorite can of broth
2 lrg cans tomatoes (i use fresh tomatoes i have put up, 2 qt jars)
1 box frozen spinach ( this is how i sneak greens down the kids.)
1 frozen bag lima beans
1 frozen bag corn
1 lg can potatoes
1 lg can green beans
1/4 cup sugar
1/2 cup ketchup
1 can tomato paste
salt and pepper to taste
Directions:
1. There are many variations of this soup but basically you throw it in a pot and let it cook . I normally bring it to a boil and then turn it down on summer for 1 or 2 hours depending on how thick you like your soup. The trick to most tomato based soups is to add the sugar because canned tomatoes are high in acid and create a acid yuck taste to the soup. If you want beef then you have the choice to either brown hamburger or beef stew and add it. Make sure you wash the meat to get the fat off of it before adding it to the soup. I often use 1 lb of ground turkey and 1 lb of ground sirloin browned.
