Ingredients:
1 onion, diced
2 garlic cloves, minced
2 cups baby carrots, cut into bite sized pieces, peeled
1 head celery heart, cut into bite sized pieces
1 (8 ounce) package button mushrooms, sliced
2 zucchini, cut into bite sized pieces
1 (16 ounce) can crushed tomatoes
4 cups chicken broth
1 teapsoon dried basil
1 teaspoon dried oregano
salt and pepper
2 cups frozen broccoli florets
2 cups frozen spinach
parmesan cheese
Directions:
1. 1, Heat a large stockpot over high heat. Spray with cooking spray.
2. 2. Add the oinion and saute for 2 minutes. Add the garlidc and saute for minutes more.
3. 3. Add everything else excpet for the broccoli, spinach, and parm cheese.
4. 4. Bring to a boil and then let simmer for 15 minutes.
5. 5. Add the broccoli and spinach and let cook another 5 minutes.
6. 6 Serve and top with cheese.
