This one is easy to make as it is done in a slow cooker. It is both hearty and filling.
Ingredients:
3 (14 1/2 ounce) cans diced tomatoes, undrained
2 (14 1/2 ounce) cans beef broth
1 (10 ounce) package frozen whole kernel corn
1 (10 ounce) package frozen baby lima beans
2 medium baking potatoes, peeled and diced
1 large onion, chopped
2 carrots, sliced
3 celery ribs, sliced
1/4 teaspoon salt
1/2 teaspoon pepper
1 teaspoon dried basil
1/2 teaspoon dried thyme
2 bay leaves
Directions:
1. Mix together all the ingredients in a 5 quart slow cooker.
2. Cover slow cooker and cook on HIGH 8-9 hours.
3. Remove bay leaves and discard; serve with warm crusty bread.
