Really good. Can be made with broccoli instead of the cauliflower, but I preferred the cauliflower. HEALTHY!
Ingredients:
1 head cauliflower (chopped)
2 carrots (peeled, grated)
1 green pepper (chopped)
1 bunch radish (sliced thin)
2 tomatoes (chopped)
1 small garlic clove (minced)
1 cup mayonnaise
1/4 cup ketchup
2 teaspoons worcestershire sauce
salt & fresh ground pepper (to taste)
baby spinach (as needed)
Directions:
1. Combine the cauliflower, carrots, green pepper, radishes, tomatoes, garlic, mayonnaise, ketchup, Worcestershire and salt and pepper.
2. Cover. Chill 2 hours.
3. Serve on spinach.
