Ingredients:
1 cup(s) dry quinoa cooked according 2 directions on pkg.
1 bunch(es) asparagus cut into 3rds
1 bunch(es) mint finely chopped
pine nuts or hazelnuts toasted & salted
1 zucchini cut into cubes
olive oil to taste
fresh squeezed lemon or lime or orange juice to taste
sea salt to taste
blk pepper to taste
crushed red pepper optional
feta cheese optional
Directions:
1. Make quinoa 1st. Blanch asparagus for 1 min. Then put in an ice water bath. Cut zucchini & salt & place between paper towels to sweat out water.Toast nuts. Let quinoa rest for 5-10. Drain asparagus & pat dry. Combine all ingredients in a bowl & finish w/ olive oil.
