Boiled vegetables pureed into a soup
Ingredients:
2 potatoes, diced
4 carrots, diced
1/2 onion, diced
2 cloves garlic, diced
2 zucchini, squash, summer, zucchini, includes skin, diced
6 cups water
Directions:
1. Dice vegetables
2. Put into a large pot and fill with water until vegetables are just covered
3. Boil vegetables until soft
4. Mix in blender
5. Season to taste; water can be adjusted according to personal preference of thickness of soup
