Vegetable Pilaf

Ingredients:
1 onion, chopped
1 garlic clove
2 cups long grain brown rice
1 stalk celery
4 ounces green beans
4 ounces zucchini, chopped
4 ounces broccoli florets
1 green pepper
2 tablespoons currants
7 tablespoons light soy sauce or 7 tablespoons tamari
1 pint boiling water
1 bay leaf
Directions:
1. Use non stick spray.
2. Cook onion, add garlic and rice and cook for 2 minutes.
3. Add vegetables, currants, bay leaf and water.
4. Bring to a boil, then simmer covered for 30 minutes or until rice is cooked.
5. Add soy sauce and cook covered for 5 minutes. remove bay leaf and serve.
