This omlette is actually big enough for 2 people, but 1 person could have a hearty and healthy breakfast without too many calories if they choose to eat the whole thing.
Ingredients:
4 oz egg beaters
1 tbl mushrooms, sliced
1 tbl onion, diced
1 tbl bell peppers, chopped
1 tbl cottage cheese, lowfat, 1% milkfat
1 tbl mozzarella, cheese, part skim
1 tbl tomato, diced
Directions:
1. Coat inside of large skillet with cooking spray. Pour eggbeaters into skillet and cook on low heat until almost done. Add next four ingredients and fold in half. Cover and turn off heat for 1-2 mins. Remove to plate sprinkle with grated Mozzarella cheese and diced tomatoes.
2. Note: I usually Micro-cook my veggies for about 4 mins before adding them to my omlette. It depends on how done you want your vegetables.
