Vegetable Mushroom Fried Rice

Ingredients:
2 cups brown rice (cooked – follow the package instruction)
1 medium carrot cut into cubes
1 cup chopped broccoli
1 cup chopped cauliflower
1 cup chopped beans
1 small red onion, chopped
1 can mushroom in oil
2 teaspoons olive or vegetable oil
salt and pepper
Directions:
1. 1. Heat 1 inch water to boiling in skillet. Add carrots, broccoli, cauliflower and beans. Heat to boiling; reduce heat to medium. Cook until crisp-tender; drain.
2. 2.a Mixed Vegetables: Heat oil in skillet over medium heat. Cook onion in oil, stirring occasionally, until tender. Stir in brown rice, carrots, broccoli, cauliflower, beans and mushroom. Add salt and pepper to taste. Cook 1 minute, stirring occasionally. Remove mixture from heat; keep warm.
3. 2.b Mushroom: Heat mushroom in oil in skillet over medium heat. Add onion, stirring occasionally, until tender. Stir in brown rice, add salt and pepper to taste. Cook 1 minute, stirring occasionally. Remove mixture from heat; keep warm.
4. Serve warm.
