Ingredients:
1 tablespoon olive oil
2 yellow squash, sliced
2 zucchini, sliced
1 onion, chopped
1 green pepper, chopped
2 cloves garlic, chopped
16 ounce tomatoes, diced
1 1/2 teaspoon italian seasoning
1 salt and pepper to taste
1/4 cup grated parmesan cheese
Directions:
1. Preheat oven to 325 degrees.
2. In a large saute pan heat olive oil over medium heat. Add squash, zucchini, onion, green pepper, and garlic. Saute until all vegetables are soft. Add tomatoes with juice. Season with Italian seasoning, salt and pepper.
3. Transfer to a glass baking dish. Bake for 20 minutes, sprinkle with Parmesan cheese and bake another 10 minutes.
4. Makes 6-1 cup servings
