Vegetable Linguine With Blue Cheese

This recipe uses lots of fresh vegetables and makes its own blue cheese sauce. Easy, delicious, and still good for you!
Ingredients:
1 lb linguine, cooked
1 cup roma tomato, diced
1/2 cup zucchini, diced
1/2 cup summer squash, diced
1/4 cup yellow bell pepper, diced
1/4 cup red bell pepper, diced
1 garlic clove, minced
1/2 tablespoon garlic salt
1/2 tablespoon dried basil
1 tablespoon dried parsley
1/4 cup blue cheese, crumbled
1/4 cup red wine vinegar
Directions:
1. Start pasta boiling.
2. Meanwhile, mix all remaining ingredients in a bowl.
3. When past is done, mix in with the veggie/cheese mixture.
4. Place in an oven safe casserole dish.
5. Bake at 325°F for 30 minutes.
