Ingredients:
1 quart vegetable broth
1 cup water
1 (14 ounce) can diced tomatoes
3/4 cup brown lentils
1 cup corn
1 cup chopped onion
1 cup bell pepper
1/3 cup sliced carrot
1/3 cup sliced celery
1 garlic clove, minced
1 tablespoon chili powder
3/4 teaspoon ground cumin
1 bay leaf
salt and pepper
Directions:
1. Combine all ingredients, except salt and pepper in slow cooker; cover and cook on high 3-4 hours.
2. Discard bay leaf; season to taste with salt and pepper.
