Vegetable Fritters

These are a great way to pack in some vegies to children's diets. These are great served with a tomato salsa, some cottage cheese to spread on top, or alone. These are also extremely inexpensive and great for the lunchbox.
Ingredients:
500 g frozen mixed vegetables
1/3 cup self-raising flour
3 eggs, lightly beaten
1/3 cup cheese, grated
1 tablespoon canola oil
Directions:
1. Place mixed vegetables in a microwave safe bowl and cover with plastic wrap. Microwave for 2 minutes on high. Drain. Transfer to a plate lined with paper towel.
2. Combine vegies, flour, egg and cheese in a large bowl.
3. Heat half the oil in a large frying pan. Cook fritters by the 1/3 cup for 4 minutes on each side, or until golden and cooked through.
