Vegetable Frittata - Simple

Something quick and delicious
Ingredients:
4 -5 medium eggs, well beaten
1/4 cup onion, diced
1/4 cup bell pepper
1 medium potato, raw diced
1 large carrot, peeled and diced
1 cup tasty cheese
1 teaspoon butter
Directions:
1. Spray the bottom of a fry pan with non stick cooking spray.
2. Sautee veges over a medium heat.
3. Pour the beaten eggs over the sauteed vegetables.
4. Sprinkle the cheese on top.
5. Cover and cook on a low-med heat until cheese is melted and egg is cooked.
6. Remove from heat.
7. Let it cool slightly before slicing and serving.
8. Enjoy! :-).
