A dairy-free and gluten-free pie packed with protein and healthy vegetables
Ingredients:
3 eggs
2 egg whites
1 pinch pepper
1/4 cup onion, chopped
1 cloves garlic, diced
1/2 cup spinach, chopped
1/3 cup cherry tomatoes, chopped
1/3 cup yellow squash, sliced
Directions:
1. Line and stack deep pie plate with vegetables.
2. Combine and whisk together the eggs, pepper and salt. Pour mixture into pie plate with veggies.
3. Bake in a moderate oven (180°C) for 40 minutes
4. Serve warm
