A fast and easy vegetarian recipe from the cookbook, Hooked on Heat by Meena Agarwal. It's great as it is, but if you want, you can add a tofu, chicken, seafood, or beef.
Ingredients:
3 1/2 ounces egg noodles (this is equal to 100 grams)
1 medium onion, thinly sliced
1 cup mushroom, sliced
1 cup cabbage, thinly shredded
1 medium green bell pepper, thinly sliced
1 teaspoon ginger, finely chopped
1 teaspoon garlic, finely chopped
2 tablespoons light cooking oil
1 teaspoon pure sesame oil
2 tablespoons soy sauce
1/4 teaspoon white pepper
1/2 teaspoon black pepper
salt, to taste
Directions:
1. BOIL noodles, drain and toss in sesame oil. Set aside to cool.
2. HEAT oil in a wok and saute ginger and garlic till fragrant. Add onions and mushrooms, and fry till mushrooms give out moisture and cook through.
3. ADD salt, black pepper, white pepper, cabbage and green peppers, and stir-fry for a minute.
4. THROW in the pre-boiled noodles and soya sauce and toss to coat evenly with veggies.
