Vegetable Casserole

This is a great way to turn plain old mixed vegetables into something a little more interesting. My children really like this dish.
Ingredients:
2 (15 ounce) cans mixed vegetables, drained
1 (10 1/2 ounce) can condensed cream of celery soup
5 1/4 ounces milk (1/2 soup can of milk)
1 teaspoon onion powder
1/8 teaspoon garlic powder
1/2 teaspoon pepper (to taste)
4 ounces ritz crackers, crushed (1 sleeve)
4 tablespoons margarine, melted
Directions:
1. Crush half of the crackers. Melt 2 T. margarine and mix with the first half of the crackers. Put mixture in the bottom of a 2 quart casserole dish.
2. Drain vegetables, place in a mixing bowl, and sprinkle with pepper.
3. Add onion powder and garlic powder and mix well.
4. In another bowl mix soup and milk. Add to vegetables and stir well, and place vegetables in casserole dish.
5. Crush other half of crackers and mix with remainder of margarine. Put on top of vegetables.
6. Bake at 350 degrees for app. 30 minutes.
