Vegetable and bean burgers. Serve with salad and bread, yummy!
Ingredients:
1 small onion
1 clove garlic
50 g frozen peas
50 g sweetcorn
50 g zucchini
230 g red kidney beans
50 g carrot
100 g oat bran
Directions:
1. Fry off the vegetables except the sweetcorn and peas in a non stick pan.
2. Defrost the peas
3. Add the peas, sweetcorn kidney beans (seasoning to taste; eg pepper, parsley) and mash together.
4. Add oat bran until the mixture is at the right consistency to form burgers.
5. Fry or grill the burgers for 3-4 minutes on each side.
