Delicious mediterranean salad with chickpeas, tomatoes, cucumbers & greens
Ingredients:
16 oz. (or larger) can of chickpeas
1 lg. or 2 c. grape tomatoes
seedless cucumber
2 scallions
fresh basil
baby organic greens, romaine or whatever you like
balamic vinegar
extra virgin olive oil
Directions:
1. Drain & rinse chickpeas
2. Wash & slice tomatoes
3. Peel & slice cucumber
4. Wash & slice cukes
5. Wash & chiffonade basil
6. Wash & drain greens
7. Add all veggies to lg. salad bowl.
8. Add vinegar & olive oil to taste with ground pepper.
9. Enjoy!
