Vegan Tofurkey Club Wraps W/Ranch Dressing

It's light, refreshing, tasty and healthy.
Ingredients:
1 cup vegan mayonnaise
1/4 cup soymilk
2 tablespoons green onions, sliced
1 tablespoon chives, chopped
2 teaspoons dried parsley
2 garlic cloves, crushed
1 pinch salt
black pepper
8 whole wheat tortillas
8 lettuce leaves
1/4 lb baby spinach leaves
1 small cucumber, sliced
2 tomatoes, small and ripe, sliced
1/2 cup red onion, sliced
1 cup alfalfa sprout
16 lightlife turkey slices (tofurkey is preferred)
16 slices vegan bacon
Directions:
1. For the dressing, crush the garlic with the salt and mash together into a paste. Mix with the rest of the ingredients, adding the milk slowly to desired consistency. Chill for at least 30 minutes to let the flavors meld.
2. Cook the facon and set on a paper towel to drain.
3. Assemble the wraps in the order listed, one lettuce leaf, baby spinach, 4 cucumber slices, 2 tomato slices, onions, sprouts, 2 slices of Tofurkey and 2 pieces of facon. Top with the ranch dressing. Fold up, eat, enjoy.
