Vegan Stuffed Peppers

Bell peppers stuffed with rice mixture. High fiber with lots of vitamins C & A. I adapt this recipe to fit whatever's in the fridge.
Ingredients:
2 large red bell peppers
6 oz tomato paste
2 cups cooked brown rice
1 onion, minced
1 small tomato, chopped
1 mushroom, minced
1 clove garlic, minced
2 green onions
1/2 tsp salt
1/2 tsp curry powder
1/2 tsp onion powder
1/2 tsp chili powder
1/4 c lime juice
1 tbsp olive oil
Directions:
1. Cook rice according to directions on package.
2. Preheat oven to ~350 F.
3. Saute onion and garlic until almost translucent, add mushroom and cook for a moment more. Add rice, tomato, tomato paste, lime juice, and seasoning and cook for 2-3 minutes.
4. Half the peppers and fill with the rice mixture, and bake for 15-25 minutes.
