Vegan Stir Fry

Just a basic , simple stir-fry recipe I got from my aunt. I cooked this for my Mom one night and she loved it. If you're not vegetarian, it is really easy to add beef or chicken instead of tofu. Enjoy it with a glass of mango juice! Read more !
Ingredients:
2 t olive oil (though you can use a bit more if you really want to)
1 package firm organic tofu, cubed
1 large white onion, chopped
2 zucchini, sliced/chopped
2 cups broccoli, chopped
1 head bok choy, chopped
3 cloves garlic, minced
1 red bell pepper, cut in strips or chopped
1 bunch asparagus, chopped
mushrooms, quartered
2 t freshly grated ginger
soy sauce to taste
sesame seeds (optional)
2 cups brown rice, prepared
Directions:
1. Prepare two pans; heat 1-2 T of olive oil in each pan.
2. Saute the tofu in one pan, adding soy sauce (this can be optional, but I like the flavor the tofu gets) and about 1 T of freshly grated ginger
3. In the second pan, saute the chopped onion and garlic until the onion becomes transparent.
4. Add the rest of the veggies (and soy sauce if you wish to do so), with the exception of the Bok Choy, and saute for another 4 minutes, stirring frequently.
5. Add the Bok Choy and saute for another 3 minutes
6. Serve on top of rice and enjoy! You can eat it with nori sheets, too.
