Vegan Stewed White Beans

Ingredients:
1 tablespoon cooking oil
1 medium onion, minced
3 stalks celery, minced
2 cups tomatoes, diced
1 teaspoon paprika
1 teaspoon tarragon
1 teaspoon salt
3 (15 ounce) cans white beans, rinsed and drained
4 cups lettuce
1 avocado, sliced
Directions:
1. Heat the oil in a large skillet or wok over medium high heat. Add the onion and celery and sauté until golden.
2. Stir in the tomato and seasonings. Bring to a simmer.
3. Add the beans and simmer for 30 minutes on very low heat.
4. Divide the lettuce evenly onto 4 plates. Top with 1/4 of the stewed beans and then arrange sliced avocado over all.
