Vegan Quinoa and Black Beans

Ingredients:
1 tablespoon cooking oil
1 onion, chopped
3 garlic cloves, minced
3/4 cup quinoa, uncooked
1 1/2 cups vegetable broth
1 teaspoon cumin
1/4 teaspoon cayenne pepper
1 cup corn, frozen
2 (15 ounce) cans black beans
1/2 cup cilantro, chopped
Directions:
1. Heat the oil in a large saucepan over medium heat. Fry the onion until it starts to brown, add the garlic and cook for another minute.
2. Mix the quinoa into the pan and cover with the veggie broth. Season with the cumin and cayenne. Bring to a boil, cover, reduce the heat and simmer for 20 minutes.
3. Stir in the frozen corn and allow to simmer for an additional five minutes. Turn off the heat and stir in the beans and cilantro.
