My hubby grew up in the South eating this, and I veganized it for him. He said it tastes just like the real thing.
Ingredients:
1 cup raw cashews
3 teaspoons lemon juice
1/2 cup nutritional yeast
1/2 cup vegan mayonnaise (preferably vegenaise)
1 (8 ounce) container vegan cream cheese
1 (8 ounce) package vegan cheese (preferably vegan gourmet cheddar)
4 teaspoons apple cider vinegar
8 ounces pimientos, drained
1/2 teaspoon pepper
Directions:
1. Mix everything together with a mixer unless well-blended. Chill at least one hour to get best taste.
