Vegan Peanut Butter Coffee Cake

Ingredients:
* 1/2 cup brown sugar + 1 cup
* 1/2 cup flour + 2 1/4 cups
* 1/4 cup peanut butter + 1/2 cup
* 3 tbsp margarine + 1/4 cup
* 2 tsp baking powder
* 1/2 tsp baking soda
* 1/4 tsp salt
* 1 cup soy milk
* egg replacer for 2 eggs
Directions:
1. Pre-heat the oven to 375 degrees. Grease a 9x13 inch baking pan.
2. For the topping of the coffee cake, mix together the 1/2 cup brown sugar and 1/2 cup flour. Add the peanut butter and vegan margarine until the mixture is crumbly.
3. In a large bowl, mix together the 2 1/4 cups flour, 1 cup brown sugar, baking powder, baking soda and salt. Add the soy milk, 1/2 cup peanut butter, egg replacer and 1/4 cup margarine, and beat until smooth.
4. Pour the batter into the baking powder, and sprinkle the topping mix on top.
5. Bake for 30 minutes, or until toothpick inserted in center comes out clean.
