Vegan Mayonnaise

A MUCH MUCH healthier alternative to mayonnaise. Spices can be added to taste.
Ingredients:
2 cups lightly salt water
8 ounces soft tofu
2 tablespoons lemon juice
1/4 teaspoon salt
Directions:
1. Boil salted water, add tofu and return to a boil.
2. Immediately remove from heat and let sit for 3 minutes.
3. Drain tofu and place in food processor with remaining ingredients and process until smooth.
4. Refrigerate.
