Vegan Mashed Sweet Potatoes With Maple Syrup

Ingredients:

  • 2 1/4 lbs sweet potatoes, peeled , cut into 1 inch pieces
  • 1/4 cup (1/2 stick) soy margarine
  • 2 tbsp maple syrup

Directions:

  1. Steam potatoes until tender, about 20 mins.
  2. Mash with other ingredients, or puree if desired.
  3. Season with salt and pepper to taste.
