Vegan Gravy

This is a really simple, and great tasting gravy for Thanksgiving or any other time. It will fool meat-eaters, I swear.
Ingredients:
1/2 cup vegetable oil
1/2 cup yellow onion, chopped
5 garlic cloves, chopped
1/2 cup flour
4 tablespoons light soy sauce
4 teaspoons nutritional yeast
2 cups vegetable broth (or mushroom broth, or a mixture of the two)
1/2 teaspoon sage
1/2 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Saute the onions and garlic in the oil over medium heat for 5 minutes.
2. Stir in the flour, soy sauce and nutritional yeast to form a paste.
3. Whisk in broth.
4. Add sage, salt and pepper.
5. Reduce heat to low and simmer, stirring, for 8-10 minutes.
