Another allergy-safe recipe that was passed along to me from a friend who has dealt with allergies similar to those my kids have. Mmmm...gingerbread!
Ingredients:
1 c. sorghum or molasses
1/2 c. melted margarine or oil
2 tsp. ginger
2 c. flour
1/2 tsp. salt
1 tsp. soda (in 1 c. hot water)
Directions:
1. Beat together molasses and margarine, then beat in flour, ginger, and salt. Beat in soda water about 1/3 cup at a time, till mixture is smooth. Pour into greased/floured 9x9 pan. Bake at 350 for 35-40 minutes.
