Creamy and meaty with no cream or meat!
Ingredients:
1 3/5 cup black eyed peas 104222
2.16 cup kidney beans
5 1/2 oz tomato paste
3 1/5 cup tinned tomato, chopped
1 cup water
1 tbsp olive oil
1 1/2 cup mushroom, chopped
1 1/2 cup onion, chopped
1 large green pepper
4 stalks celery
4 clove garlic
1 cup bulgur
1/2 cup chocolate chips
3 tbsp chili powder
1 tsp paprika
1 tbsp cumin
1 tsp cinnamon
2 tsp salt
Directions:
1. Chop veggies, onion and garlic and saute them in olive oil until onions are golden.
2. Mix in spices and add enough water to keep it moist. Cook 5 minutes.
3. Stir in tomatoes, tomato paste and water.
4. Stir in bulgur.
5. Boil 5 minutes.
6. Stir in beans.
7. Simmer 20 minutes.
8. Add water, salt and spices to adjust for taste and consistency.
9. Stir in chocolate chips until melted.
