Cold chickpea based mediterranean salad. Healthy and vegan.
Ingredients:
1 medium tomato, cubed
14 ounces artichoke hearts, quartered
30 ounces canned chick-peas
1/2 red onion, minced
2 garlic cloves, minced
1/4 cup olive oil
1/4 cup balsamic vinegar
salt (to taste)
pepper (to taste)
Directions:
1. Rinse the canned chickpeas. Mix all ingredients in a large bowl. Serve Cold.
