Ingredients:
1 1/4 cup all-bran
1 cup rice milk
1 1/2 cup bananas, sliced
5 tablespoons unsweetened applesauce
1 tablespoon egg substitute
4 tablespoons water
1 1/3 cup whole wheat flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup brown sugar
Directions:
1. Preheat oven at 400F
2. Mix the cereal and sliced bananas in a large bowl.
3. Pour in the milk and let it sink in.
4. Mix the egg substitute with water, and add to the mixture along with the applesauce. Mix well.
5. Mix the flour, baking powder, salt and brown sugar.
6. Add dry mixture to the banana mixture.
7. Mix well.
8. Pour in greased muffin pans.
9. Bake for about 25 minutes.
