a vegan muffin, add nuts if you want
Ingredients:
2 tablespoons sugar
1/4 cup egg substitute
1 teaspoon vanilla
1/2 cup soy milk
2 bananas, mashed
1 1/2 cups flour
1/4 teaspoon baking soda
Directions:
1. Mix all ingredients except the last two, then sift them into the mixture.
2. Don't overstir.
3. Bake at 350 degrees Fahrenheit for 25-30 minutes in greased muffin tins.
