Vegan Banana Chocolate Chip Walnut Bread

Makes 1 loaf or 4 mini loaves.
Ingredients:
1/4 cup margarine
1 cup sugar
1 cup mashed banana
1/4 cup applesauce
1 teaspoon vanilla
5 tablespoons soy yogurt
1 1/2 cups flour
1/2 cup whole wheat flour
1/2 teaspoon salt
1 teaspoon baking soda
1/3 cup chocolate chips
1/3 cup walnuts
Directions:
1. Preheat oven to 350.
2. In a large bowl, cream margarine and sugar.
3. Add applesauce, bananas, vanilla and soy yogurt.
4. In a separate bowl, combine flours, salt and baking soda. Mix.
5. Gradually add dry ingredients to wet ingredients. Mix gently. Mixture will be lumpy.
6. Spoon mixture into greased bread pan or mini loaf pans, filling about 3/4 of the way.
7. Bake 50 - 60 minutes, until edges of the loaves start to brown.
8. Let cool on a wire rack.
