Vegan Avocado and Bean Soft Taco

My hubby is now following a vegan diet, so I created this recipe for his main dish. You can use a prepared vegan refried beans (Fig Food Co. Organic Refried Beans work fine) or quickly make your own by food processing black beans, garlic and oil and cooking them on the stove.
Ingredients:
1 cup vegan refried beans
1 medium ripe avocado
1 medium tomato, chopped
1 teaspoon lime juice
4 whole wheat tortillas
4 tablespoons salsa (mild, medium or hot, you choose)
Directions:
1. Reheat your refried beans in either the microwave or in a small sauce pan.
2. Slice open the Avocado, remove seed and scoop into a medium bowl.
3. Smush the avocado.
4. Add chopped tomatoes and lime juice to the avocado and mix.
5. Warm your tortillas (either 30 seconds in microwave or separately on warm fry pan or grill pan).
6. Build tacos - put refried beans in tortillas, spoon on a quarter of the avocado mixture and your chosen salsa. Serve right away.
