A friend from work gave me this recipe and it sounds lovely (strange but lovely)
Ingredients:
2 green apples, green
2 red apples, red
1/2 lemon, juice of, just a sqeeze
1 1/2 cups walnuts
4 celery ribs
2 tablespoons vegan mayonnaise, vegan mayo
Directions:
1. Core and chop the apples into 1 inch pieces (leave the skin on) toss in the leamon so they don't discolor.
2. Chop walnuts roughly.
3. Chop celery and mix all ingredients together with the mayonnaise.
