Calorie count couldn't locate vegan parmesan cheese, although that's what we used. Also, we didn't use margarine, we used Earth Balance. Blend (in blender) all ingredients except macaroni and heat. Add broth to get to desired consistency. Flavor with garlic pepper, pepper, optional sun-dried tomatoes, spinach, etc. Also could add Morningstar farms chik'n strips to make it chicken alfredo. Completely VEGAN!! Cruelty free!
Ingredients:
8 ounces silken tofu
2 tbsp nutritional yeast flakes
2 tbsp parmesan cheese
1/2 cup vegetable broth
8 ounces white mushrooms
2 tbsp margarine
16 ounces elbow macaroni
