Ingredients:
butter
12 ounce(s) chicken broth
flour
2 tablespoon(s) holland house white cooking wine
1 tablespoon(s) lemon juice
1/4 pound(s) veal per person
Directions:
1. Pound veal very thin
2. dredge in flour
3. skillet fry to brown in butter until juicy and turn over about 3 min per side
4. set aside in 225 deg oven
5. deglace pan with chicken broth
6. add lemon juice and wine to taste
7. reduce
8. thicken with butter or flour to taste
9. Pour gravy on veal
