Veal Curry With Carrots

I made this dish with ingredients I had on hand. It is a really quick meal which I served with roti - the combination worked really well and elicited responses of mmmm from the family as they were eating. I just buy the frozen roti from Indian shops, but I am sure there must be a nice roti recipe on zaar! The cumin gives this a really special taste, so add more if you like this spice.
Ingredients:
300 g veal, thinly sliced
4 large carrots, grated
1 leek, chopped
1 cup coconut milk
1 tablespoon red curry paste
1 tablespoon tomato paste
2 teaspoons oil
1 teaspoon ground cumin
1/4 teaspoon salt, to taste
1 tablespoon coriander, chopped (optional)
Directions:
1. Heat oil over medium high heat and brown veal, stirfrying till browned all over,.
2. Add curry paste and stir through, then add tomato paste,salt, leeks and cumin.
3. Add carrots and coconut milk and cook over medium heat for about 15 minutes or until carrots are soft and most of the coconut milk has been absorbed.
4. Sprinkle with coriander and serve with fried roti and sweet chilli sauce.
